PUMPKIN White Chicken Chili 🌶️🧡
It’s never a bad idea to bring pumpkin to the party 😉 Here’s a heathy & delicious recipe for you to try if you have any remaining pumpkin in the fridge like I did! One last soup recipe to close out November, let’s do it 👇🏻
2 chicken breasts, cut in bite-size pieces & coated in 1 tbsp corn starch
1 small onion, diced
1 jalapeño, seeded / finely chopped
2 cloves garlic, minced
15oz can cannellini beans, drained
15 oz can pinto beans, drained
15 oz can corn, drained
15 oz can full fat coconut milk
1/2 c pumpkin purée
1 tbsp cumin
1 tsp oregano
1/2 tsp of both salt / pepper
1/4 tsp nutmeg
4 c chicken broth
Heat the oil in a dutch oven/ large soup pot over medium heat. Add onion, sauté for 2-3 minutes until slightly softened. Add jalapeño & garlic, sauté 1 minute longer until fragrant. Add coated chicken pieces, cook 5 minutes stirring often) until outsides are golden brown.
