Stuffed HONEYNUT SQUASH 🧡✨
I’ve been on a squash kick lately & whipped up this combo a few weeks ago that turned out AMAZING. Flavorful, filling & a perfect side dish or meal for 1-2 people 😊 Try this one out asap!!
1 honeynut squash
Olive oil
1/2 lb Italian sausage
1/2 c celery, chopped
1/2 c onion, chopped
1 small apple, chopped
1/4 tsp of each: dried thyme, rosemary, garlic powder, red pepper flakes
Salt & pepper to taste
Toppings: laclarecreamery goat cheese crumbles, pomegranate seeds, parsley
Preheat oven to 400°F, line a baking sheet with parchment paper & set aside. Cut squash in half lengthwise, scoop out the seeds & drizzle insides with olive oil, salt, pepper. Roast the squash cut-side down for 25 minutes until fork tender, let cool slightly.
Meanwhile, cook Italian sausage in a skillet over medium heat until browned. Remove from pan, leaving any remaining grease. Add 1 tbsp of olive oil, then cook onion & celery 3-5 minutes until softened. Add apples & cook for...
