I’ve made this 3 times in 3 weeks 😅 It’s SO easy and makes the best leftovers. Chicken is optional, but if you add it you MUST make my Balsamic Grilled Chicken. It’s perfection!!!
Serves 4-6
Total Time: 35 minutes
Pesto Orzo Pasta Salad:
8 oz dried orzo or any small pasta
½ cup pesto
1 tablespoon olive oil (use the oil from the marinated mozzarella!)
3 tablespoons red wine vinegar
12 oz marinated fresh mozzarella balls, cut in half or quartered depending on the size
1 large ripe avocado, diced
4 cups arugula
Kosher salt & pepper to taste
Balsamic Grilled Chicken:
1 lb chicken breasts, about 2 large breasts cut lengthwise
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 tablespoons honey
1 tablespoon soy sauce
Juice from 1 lemon
1 minced garlic clove or 1 teaspoon garlic powder
1 teaspoon kosher salt
1 teaspoon pepper
1/2 teaspoon red chili flakes
