This has become my go to for hosting friends in the summertime - the sauce is always a hit! Ingredients: Chicken Skewers: 1 ½- 2 lbs chicken thighs, cut into 1 1/2 inch chunks 2 bell peppers, cut into 2 inch chunks 1 cup pineapple, cut into 1 inch chunks Kosher salt & pepper 2-3 tablespoons olive oil Green onion & sesame seeds to garnish  Steamed white rice to serve Teriyaki Sauce: 1/2 cup reduced sodium soy sauce 1/3 cup water 1/4 cup brown or coconut sugar   1 tablespoon rice wine vinegar  1 tablespoon sriracha, optional for spice 2 teaspoons ginger, freshly grated 2 cloves garlic, grated or minced   1 tablespoon tapioca flour or corn starch + 1/4 cup water  Carrot salad: 1 lb carrots, thinly peeled (use a potato peeler!) 2 tablespoons toasted sesame oil  1 tablespoon rice wine vinegar  2 teaspoons soy sauce 2 teaspoons honey 1 lime, juiced Sesame seeds to garnish  Instructions: Teriyaki Skewers: First, make the teriyaki sauce.
