These Strawberry Streusel Muffins are the perfect treat to bring to an Easter brunch or if you’re jumping on the spring baking train 🍓
Ingredients:
2 cups all purpose flour + 2 teaspoons for coating the strawberries
2 teaspoons baking powder
1/2 teaspoon kosher salt
1/2 cup butter, softened
1 cup granulated sugar
2 eggs
1/4 cup Greek yogurt or sour cream
1 teaspoon vanilla
1/2 cup milk
2 cups strawberries, diced (fresh or frozen and thawed)
½ cup strawberry jam, optional
Brown Sugar Crumble:
1/2 cup flour
1/2 cup brown sugar
1/4 cup butter
Preheat the oven to 350. Line a muffin tin with parchment or muffin liners.
Make the brown sugar crumble by combining all the ingredients in a small bowl, preferably using your hands, until all ingredients are fully incorporated and the mixture resembles play dough. Set aside.
In a medium bowl, mix together the flour, baking powder, and salt. Set aside.
