Simple roasted sweet potatoes are great, but when you add brown butter, crispy fried herbs, and goat cheese, they’re taken to the next level 👏 These potatoes are the perfect simple holiday side or easy vegetable dish for a weeknight dinner! Serves: 4-6 Total time: 40 minutes Ingredients: 1 ½ pounds sweet potatoes, cut into 1-inch chunks 1 tablespoon extra virgin olive oil ½ teaspoon kosher salt Freshly ground black pepper 4 tablespoons salted butter, divided 1 tablespoon finely chopped fresh rosemary leaves 1 tablespoon finely chopped fresh sage ½ cup crumbled goat cheese Flakey salt or harmonyblends Citrus Finishing Salt Instructions: Preheat the oven to 425ºF. Add the sweet potatoes to a large sheet pan along with the olive oil, salt, and pepper and use your hands to toss everything together.
