This is for my sundried tomato lovers!! I have always loved marinating my chicken in yogurt- it gives it great flavor and keeps your chicken moist on the grill. This marinade is so delicious you will want to smother it on everything which is why I made a little extra to set aside and brush over the chicken before serving. I served these skewers over white rice and grilled some zucchini alongside the chicken for a complete meal. (Oven instructions included down below as well!) Serves: 4 Total Time: 30 minutes, plus marinating time 1 ½ pounds boneless skinless chicken breasts or thighs, cut into bite-sized pieces 1 cup sundried tomatoes in oil 1 cup Greek yogurt 1 cup fresh basil leaves 1 tablespoon red wine vinegar 1 teaspoon kosher salt Instructions: In a food processor, add the sundried tomatoes and oil, Greek yogurt, basil, vinegar and salt.
