No other tuna sandwich will EVER compare to this one. It’s super simple but all the flavors come together and complement each other so well. Inspired by my all time favorite tuna sandwich from Gjusta Bakery in Los Angeles! Makes 1 sandwich 1 5 oz can tuna in olive oil, drained (I used @Fishwife) 1 tablespoon capers, drained and chopped 1/2 tablespoon mayonnaise, use more if using tuna in water/per your preference Salt and pepper to taste 1-2 slices of lightly toasted sourdough bread 2 tablespoons olive tapenade 1 fire toasted red bell pepper, sliced 1/2 Persian cucumber, thinly sliced Small handful of sprouts or micro greens Instructions: In a small bowl, combine the tuna, capers and mayo. Season to taste. Spread the olive tapenade onto the sourdough bread then add the tuna mixture. Top with red bell pepper, cucumbers and sprouts.
