New recipe, let’s make egg muffins! I really like the freedom of this recipe. Feel free to add anything you like to eat. Helpful hint, the more ingredients you add the less eggs you will need. I normally use between 10-12 eggs depending on how many additions I add. I’ve made them with green onions, bell peppers, broccoli, spinach for a veggie version. I’ve also made them with breakfast sausage. I usually add 1lb of meat to any veggies. But feel free to experiment to your liking. *Preheat oven to 350 degrees. If using meat start sautéing the meat. While that’s cooking, chop up your veggies of choice. Add chopped veggies to the pan and sauté until tender. While this is cooking, crack your eggs in a large mixing bowl. Set aside the sautéed mixture and let cool down a bit. (We don’t want it cooking the eggs when we combine). Combine the sautéd mixture and the cheese of your choice in the eggs and combine.
