What do you need…. -Chicken Breast -Olive Oil, Salt and Pepper or just season as you wish -Parchment Paper -Steel pan or any ole pan will do -High Heat Oil -Butter -White Wine, or water if you prefer -Gold Potatoes -Beef Tallow -Salt and Pepper -Parmesan Cheese CHICKEN **Pound out chicken to even consistency **Add a bit of olive oil and season **Steal Pan at Med Low for 3-4min, hot enough a drop of water will dance **Cook chicken for about 5min on first side, then cook to internal temp of about 158, put aside it will carry over cook up to 165 **Add white wine to pan, about a cup or more, reduce for a couple minutes **Scrape the pan with wooden spoon to release the flavor, otherwise known as Fond **Add 2-3T of butter, 2-3min later you have a great sauce.
