A picnic sweet treat but with a boozy twist. 🍋✨
Crust Ingredients:
- crushed oatmeal cookies or graham crackers (about 1 & 1/2 cups crushed)
- 3 tbs. melted butter
Filling Ingredients:
- 1 & 1/2 cups sugar
- 4 tbs. AP flour
- zest of 1 lemon
- dash of vanilla extract
- 4 eggs
- 1/3 cup fresh lemon juice
- 1/2 cup limoncello
Recipe:
1. Crush oatmeal cookies (or graham crackers) until finely crumbled, then combine with melted butter
2. Press into a greased and lined baking dish
3. Bake crust for 20 minutes at 325F
4. Prep filling by whisking sugar, flour, and lemon zest together. Then mix in vanilla, eggs, lemon juice, and limoncello
5. Once crust is done baking, remove from oven and pour filling into crust
6. Bake for 18-20 minutes at 325F
7. Once done baking, remove from oven and chill in the fridge for 2 hours while sealed with Saran wrap
8. Finally, slice and garnish with powdered sugar to serve
