A plate of stir-fried vegetables might seem like an afterthought at most Chinese restaurants.
As one of the opening salvos of a soft-open dinner at Chow's Kitchen in Squirrel Hill last week, it served as a declaration of intent from two of Pittsburgh's most important restaurateurs that it was time to open a new door of regional Chinese culinary tradition.
