PREP TIME: 15 MINUTES | MAKES 4 SERVINGS
This classic Korean bowl is equally delicious served hot or cold, and it comes together very fast if you have the rice and beans made ahead of time. (A little Sunday night prep goes a long way in having meals at the ready in 30 minutes or less.) Speed things up even more with store-bought gochujang sauce, available at most grocery stores.
FOR THE GOCHUJANG SAUCE
4 tablespoons gochujang
2 tablespoons orange juice
2 teaspoons rice vinegar
2 teaspoons sesame oil
2 teaspoons honey
2 teaspoons freshly grated ginger
2 garlic cloves, grated
FOR THE BOWL
1 cup shredded kale
1 teaspoon soy sauce
1 teaspoon rice vinegar
1⁄2 teaspoon sesame oil
4 cups cooked brown jasmine rice
1 cup cooked aduki beans
1 red bell pepper, seeded and sliced thin
1 carrot, peeled and julienned
1 tablespoon toasted sesame seeds, for garnish
