More PASTA! Still on the kick but I’m actually eating it this time!! Uovo Raviolo from scratch!! Homemade pasta, ricotta filling from scratch (didn’t film) and a brown butter basil sauce! This was off the charts good and way harder to do than expected. Getting the pasta cooked and keeping the egg yolk soft is a task. I’m defn making another attempt soon to make it look even nicer!! I need to really learn how to remove the air like a pro! Next time I’m adding truffles and some sort of base but this was great for a first run!
Shout out to joetess daughter on the ricotta recipe. Defn took it to the next level. And shout out to my wife’s mom for being the sous chef!
