Summer is synonymous with salads, and this easy Seared Scallop Summer Salad is perfect for hot weather. Packed with fresh fruits and vegetables and topped with perfectly seared scallops, it’s a true celebration of the season.

Yields: 2 servings
Ingredients
9-10 large scallop
2 tbsp Avocado Oil
Salt and black pepper to season
For the salad
2 cups arugula
¼ red onion sliced
1 cup fresh corn kernels
1-2 peach sliced
1 cup cherry tomatoes
For the dressing
6 tbsp olive Oil
2 tbsp white wine vinegar
1 tbsp Dijon mustard
1 tbsp Honey
1 tsp salt
Black pepper to taste
Instructions
Dry scallops well and season both sides with salt and black pepper.
In a large skillet heat 2 tbsp of Avocado Oil over medium high heat.
Add scallops into the pan and sear for 1-2 minutes on each side or until golden brown. Remove from the pan.
