I had some lemons and leftover egg whites from my orange tiramisu, and I thought it would be fun to make these lemon bar-inspired brioche buns!
š· Hereās what you need to try this at home:
Makes 16 buns
Dough:
1 cup milk (lukewarm)
1/2 cup granulated sugar
2 ¼ tsp active dry yeast
4 1/2 cupsĀ all-purpose flour
1 tspĀ salt
1/2 cup unsalted butter/ 1 stick (room temp)
2Ā eggs (room temp)
1tspĀ vanilla bean paste
Lemon Curd:
1 cup Lemon Juice
1 cup granulated sugar
1/2 cup unsalted butter (cold)
3 eggs
1 Lemon zest
Streusel:
1 cupĀ all-purpose flour
1/2 cup of granulatedĀ sugar
1/3 cup unsalted butter
1 tbspĀ vanilla bean paste
Pinch of salt
Meringue:
4 egg whites
1 tbsp vanilla paste
1 cup sugar
