Green looks good on you! These greens pancakes really are magical and seriously pack in the greens! I've made these many times since I created this recipe a year ago. They are very tasty have very little binder (they're mostly veg!). They have spanakopita vibes but without the phyllo and butter. You can make these as minis too, baking them in the oven instead.
