This was on the menu for Chef’s Week at HUSH, thanks to Chef Zack for coaching me up on re-creating. Details below…. Gazpacho -2lbs Ripe Tomatoes, we used 4 Beefsteak. Remove core and quarter -1/2 English Cucumber, chopped -2 Small Bell Peppers, we used 1 Green 1 Red. No seeds, stems, etc….chopped -1/2 Red Onion, quartered -2 Cloves Garlic -1/3C Extra Virgin Olive Oil, plus a bit more -3T Sherry Vinegar -1/2tsp Ground Cumin -Salt and Pepper….generous -Couple pieces of crispy baguette, cubed **Put all in bowl, mix well and cool in fridge for a while **All in blender, taste it and adjust to your liking, we added salt and olive oil **At this point the Gazpacho is great with buttery toasted bread of choice **We added Yellow Watermelon, Blackberries, Feta Cheese and Basil to make a salad of sorts. **Great starter or enjoy as a light meal **Yellow Watermelon is sometimes hard t...
