2 big mangoes
3 egg yolks
1/3 cup sugar
3-4 tbsp heavy cream
1 tsp lime zest
1/4 tsp powdered ginger
Butter to grease the ramequins
Preheat oven to 350F degrees
Cut mangoes both sides. Peel and slice lengthwise
Butter the ramequins.
Arrange each half of the mango on each ramequins.
In a bowl whisk egg yolks with sugar for 3-4 minutes until they double the volume and turn white and foamy.
Add the heavy cream, lemon zest and ginger. Keep whisking for a one more minute.
Pour batter equally in each ramequins.
Bake for 15 minutes until top is lightly golden.
Grate some fresh lime zest.
To be served warmed.
