I love prepping spicy peanut chicken salad! I’ll usually have it over roasted sweet potatoes, cilantro lime rice, with tortilla chips, in a taco, or just on its own! I typically eyeball the ingredients too! #easyrecipe #recipe #mealprep #dinner #healthyrecipes #recipes chicken salad: - 1 rotisserie chicken (shredded) - 4 mini cucumbers - 1 1/2 red bell pepper - 1 large shredded carrot - 2 tbsp green onion - 2 tbsp cilantro - 1/2 cup edamame - 1/2 cup mandarin oranges spicy peanut dressing: (I typically blend this and add water/ lime juice depending on the flavor) - 1/2 cup peanut butter - 3 - 4 tbsp coconut aminos - 2 tsp sesame oil - 2 gloves garlic - 1 tbsp fresh ginger - juice 1/2 lime - dash of crushed red pepper (add more if you like it really spicy) - add water as needed
