You guys were on to something by substituting blackberry into our viral lemon Jell-O shots.✨🖤
Ingredients (makes about 15 slices):
- 6 lemons sliced in half and carved
- 1 cup water
- 2 tsp. vegan gelatin (agar powder)
- 1/4 cup fresh squeezed lemon juice
- 1/4 cup blackberry simple syrup (we used Monin)
- 1/2 cup Hendrick’s gin
Steps:
1. Wash lemons then slice in half and use a spoon to remove flesh. Make sure the spoon is close to the rind without puncturing a hole. Once you get a good dig, the lemons will be smooth to trace and carve.
2. Place the inside of lemons in a bowl and muddle to remove the juice. Once muddled, strain into a measuring cup to remove any pulp or seeds. Set 1/4 cup lemon juice to the side.
3. Place carved lemon cups in a baking dish, make sure they are stable and standing
4. In a pot, bring water, lemon juice, blackberry simple syrup and vegan gelatin to a boil while constantly whisking.
