Chicharron Tacos with Guacamole and Queso Oaxaca 🥓🌮.
How to make the Chicharron burnt ends :
- get Skin ON pork belly from a butcher
- poke a ton of holes in the skin then cover with salt and let sit in the fridge 48 hours to pull the moisture out
- scrape salt off, flip over and score meat side and season pork belly
- smoke or bake 4 hours at around 215F
- then place in convection oven at 450F (or air fryer) until skin is evenly crunchy and hard (about 25 - 35 minutes must watch closely and dab off any excess oil)
- once desired crispy levels are reached just take out of oven, flip it over and sauce the bottom
