before summer is over, you gotta make this Prosciutto, Goat Cheese and Grilled Peach Salad. whether you’re planning a picnic, hosting a late summer dinner party, or simply looking for a light and satisfying meal, this Summer Salad promises to be a feast for both the eyes and the taste buds. don’t skip out on the dressing— it’s one of my favorites 🤍 Ingredients 2 peaches, halved 10 ounces spinach/arugula 1 cup cherry tomatoes, halved 1 shallot, diced 1/2 cup almonds, chopped 4 tbsp fresh basil, minced 6 oz goat cheese, crumbled 8 oz prosciutto, torn or folded For the dressing 1/2 cup coconut yogurt 1/4 cup fresh basil 1 clove garlic 1 tsp apple cider vinegar 1 tsp dijon 1tsp honey Salt and pepper to taste Olive oil Instructions Coat the peaches in olive oil and grill.
