my onion butter pasta like all the good parts of french onion soup in pasta form 🍝 also gets made in the oven so super minimal effort + cooking: Ingredients 3 yellow onions (or 6 shallots) 4–6 garlic cloves 1/4 cup olive oil 1 tbsp fresh thyme 1 tbsp fresh sage Salt and pepper, to taste 10 oz pasta of choice (I used homemade pasta— recipe on my page!) 4 tbsp salted butter 1/2 cup grated Parmesan cheese Instructions 1. Preheat the oven to 450°F. Place the onions (or shallots) and garlic in a cast iron skillet. Drizzle with olive oil and sprinkle with thyme, sage, salt, and pepper. 2. Roast for 20–30 minutes, until tender and golden. Let cool slightly. 3. Cook the pasta according to package instructions. Reserve 1 cup of pasta water before draining. 4. Blend the roasted onions (or shallots) and garlic with the butter until smooth. 5. In the same pot used for the pasta, combine the blended mixture and the cooked pasta over low heat.
