๐Ÿ† ๐Ÿ… Fried Eggplant Caprese Stacks | this take a caprese salad to another level. Perfectly seasoned and crispy eggplant, topped with fresh mozzarella, the best summer tomatoes you can find, basil, and balsamic glaze. Theyโ€™re so good I can easily eat a dozen! 2 eggplants cut into 1/4 in disks 2-3 eggs, whisked Seasoned breadcrumbs, as needed Fresh mozzarella, sliced Fresh tomatoes, sliced Basil Balsamic glaze Salt & Pepper Oil for frying Slice your eggplant into 1/4 inch disks. Then set up a breading station with eggs and breadcrumbs, and bread your eggplant. Slice your mozzarella and tomatoes, and set aside. Heat your oil over high heat. Once hot, fry your eggplant in batches for 2-3 minutes per side, or until golden brown and crispy. Once done, remove and set aside on a wire rack or a paper towel lined plate, and season with salt.
