🍅 Tomato Carpaccio | hot take… but this tomato carpaccio will put a caprese salad to shame! 🍅 Carpaccio Fresh tomatoes of choice Flaky Salt Ground Coriander Fennel seeds Stracciatella Fresh Basil 🌿 Basil Oil Handful of fresh basil Olive Oil Cheese Cloth & Fine Mesh Strainer Pour about a cup of oil in a lidded container and transfer to the freezer for about 10 minutes - this will help keep the basil oil vibrant green. Bring a small pot of water to a simmer and add the basil. Blanch for 15 seconds, then immediately transfer the basil to ice water and cool. Squeeze out any excess moisture and transfer to the base of a blender. Add the cold olive oil to the basil. Add just enough to cover the basil, then blend on high until smooth. Pour the basil oil through the cheese cloth and fine mesh strainer into a separate container.
