Grilling Series S2 Ep. 1: Ramp Pesto Shrimp | welcome back to Season 2 of my Grilling Series! This is going to be a good one - So follow along, fire up that grill, and let’s get this thing started!
🌿 Ramp Pest
2 bunches of Ramps (bulbs and greens, cleaned and trimmed)
1/2 cup toasted walnuts
1/2 cup freshly grated parm
1 lemon, zested
1/2 lemon juiced
Salt & pepper, to taste
EVOO, as needed
🍤 Shrimp
2.5 pounds jumbo shrimp, cleaned
Salt & Pepper
Lemon wedge for serving

Roughly chop the ramps and add them to a base of a food processor. Then add the walnuts, parm, lemon zest & juice, salt, and pepper.
Pulse until combined. Then while processing, slowly stream in the EVOO until smooth and desired texture is reached. Taste and adjust seasoning as needed and set aside.
Pat the shrimp dry and add to a bowl. Season with salt & pepper, and top with the ramp pesto. Mix until fully coated, and let the shrimp marinate for at least 30 minutes.
