🐰Lent Ep. 3: Thai Coconut Curry Mussels | these mussels have been on repeat in my house. The broth is absolutely incredible, and makes this dish a winner!
Best part… it’s done one 25 minutes!
🌶️🥥 Mussels
2 pounds mussels
1 tbsp coconut oil
2 shallots, finely minced
3 garlic cloves, grated
1 inch ginger, grated
1 stalk lemongrass, cut into 3 inch pieces
1/2 tsp red pepper flakes, or 1-2 Thai chili
1 rounded tbsp red curry paste
1.5 cans (15oz cans) full fat coconut milk
1/2 cup seafood stock (or chicken broth)
1 tbsp fish sauce
1 lime, zested and juiced
2 tsp brown sugar
1/4 cup cilantro, chopped
1/4 cup torn basil
🥥 Coconut Rice
1 1/2 cups jasmine rice, rinsed
1 1/4 cups water
1 cup full fat coconut milk
Zest from one lime
1 tsp sugar (optional)
Pinch of salt
Rinse and clean mussels under cold water. Then let them sit in the water with salt and pepper for 30 minutes.
