Chicken Orzo Soup | the chicken noodle soup you wish you had as a kid!
š Chicken
2 large chicken breast, about 2 lbs
Garlic powder
Paprika
Salt & Pepper

1 medium onion, diced
2 medium carrots, diced
2 celery stalks, diced
4 garlic cloves, mined
1 tsp dried oregano
1 tsp fennel pollen, or crushed fennel seeds
1/2 tsp dried thyme
1/2 tsp ground coriander
1/4 tsp red pepper flakes
8 cups chicken stock
1 cup orzo
1 lemon, zested and juiced
2 tbsp parsley, chopped
2 tbsp basil, finely sliced

Season each breast with salt, pepper, garlic powder, and paprika. Heat your soup pot over high heat. Once hot, drizzle with olive oil, and add the chicken. Sear the chicken for 2 minutes per side to get a nice crust.
Remove the chicken, and add the veggies. Season with salt and a drizzle of olive oil. Cook until the veggies are softened. Then add the garlic and dried herbs. Cook until fragrant.
Add the chicken broth, and bring to a simmer. Once simmer...
