The Best French Onion Soup | This is by far my favorite way to make a French Onion Soup… and don’t @ me for using guinness in this recipe, but it adds so much depth in the flavor! Butter EVOO 4 large yellow onion, thinly sliced 4 large sweet onion, thinly sliced 5 shallots, thinly sliced 7 cippolini onions, thinly sliced 2 cups Guinness beer (about 1, 16oz can) 1/4 cup balsamic 2-4 qrts stock (depending on how many onions you have) 2 bay leafs 1 bunch thyme Gruyere cheese, freshly grated Bread for croutons Heat the butter and EVOO over medium-high heat. Once melted, add the yellow and sweet onions and season with salt. Mix until coated with the butter and lower the heat to medium, cover, and let the onions cook, untouched for 15-20 minutes. .
