🎄Feast of the 7 Fishes Ep 7: Scungilli Salad | if you need a last minute dish for Christmas Eve, or if if you just need one more fish… here’s a recipe that will come together in about 20 minutes. Make it the today, and it’ll taste even better by Christmas Eve Night. 1 can of scungilli (29oz) 1/4 to 1/3 cup celery, finely diced 1/4 to 1/3 cup fennel, finely diced 1/4 to 1/3 cup olives, cut in half 1/4 cup roasted peppers, diced 1/4 cup parsley, finely chopped 1/4 red onion, thinly sliced 1 lemon, juiced EVOO, as needed Salt & Pepper, to taste. Drain, rinse, and roughly chop the scungilli. Then add to a bowl along with the remaining ingredients. Mix until everything is combined, taste, and adjust seasoning as needed. Use this recipe as a guide, and add as much of the ingredients as your heart desires. Taste everything and adjust as needed.
