🎄Feast of the 7 Fishes Ep. 6: Shrimp Parm Crostini | this is the perfect app for Christmas Eve! Crispy fried shrimp, homemade pomodoro, and fresh mozzarella. How can you go wrong?!
🍤 Makes about 12 crostini
1 pound jumbo shrimp, cleaned and shell removed
2-3 eggs
3 garlic cloves, grated
1/4 cup pecorino
Seasoned breadcrumbs, as needed
Pomodoro
Italian Bastone
Parmigiano Reggiano
Fresh Mozzarella, torn
Basil
Oil for frying (I use getgraza sizzle)
EVOO
Salt & Pepper
In a large bowl, whisk your eggs with salt, pepper, pecorino, and grated garlic. In another bowl/plate, add your seasoned breadcrumbs.
Completely dry the shrimp and season with salt and pepper, then dump them in the egg mixture. Mix until fully coated, then transfer to the seasoned breadcrumbs and coat each side, pressing the breadcrumbs into the shrimp. Set aside in the fridge until you’re ready to fry.
Cut the bastone into crostini, season with salt, pepper, and EVOO, and toast/broil until crispy.
