š„¬ Farmerās Market Finds Ep. 6: Escarole and Bean Soup š² This is one of my favorite soups to make during soup season because it literally comes together in less than 30 minutes.
Simpler is always better, so shop at your local farmerās market to get the best quality ingredients you can find!
14oz Italian Sausage - I got mine from goode_and_local
2 bunches of Escarole (about 2lbs)
2 (15oz) cans of beans of choice
1/2 cup liquid from the beans
4 large garlic cloves, thinly sliced
Red pepper flakes
Salt to taste
6-8 cups chicken broth
Freshly grated parm
EVOO
Heat a pan over medium heat and drizzle with EVOO. Remove the sausage from the casing and add to the pan. Cook until browned and then remove.
Drizzle the pan with some more EVOO and add the garlic and red pepper. Cook until fragrant, then add the cleaned escarole. Cover and cook for about 5 minutes until wilted and tender.
