🫑 Italian Stuffed Peppers 🫑 One of my favorite weeknight meals because it only involves 2 pots, it’s easy to make, and it comes together in about 30 minutes.
Also - scoop up that extra stuffing with some chips and you’ll have an awesome dip… you can thank me later 😌😌
Peppers
-4 bell peppers, cut in half
-Salt & Pepper
-Olive Oil
-Pecorino Romano
-Fresh mozzarella to top (I used galbanicheese sliced mozzarella and it was perfect to melt on top of the peppers)
Stuffing
-1/2 cup orzo, cooked
-1 yellow onion, diced
-4 garlic cloves, grated
-1 tbsp tomato paste
-1lb ground turkey or chicken
-1 tbsp fennel seeds
-1 tbsp ground coriander
-1/4 tsp red pepper flakes
-15oz of your favorite pomodoro (I actually used biancodinapolitomatoes Pizza Sauce for this recipe and it was perfect)
-2 to 3 handfuls of shredded mozzarella
-Fresh basil, torn
-Salt & pepper to taste
-Olive oil as needed
