Easy Scallion Pancake Jian Bing 🌕🍳
A popular Chinese street food, it’s a savory breakfast food mainly filled with egg, scallion/cilantro, crispy crackers, and a sweet/spicy sauce. Instead of making the traditional crepe dough, I am using the ready-made scallion pancakes for convenience but it really works because scallion pancake is delicious on its own. For even more flavor, I am adding slices of Grass-Fed Lamb Medallions. The lamb is marinated in spices and cooked until tender. It’s the perfect meat addition to complete the simple and delicious Jian Bing.
INGREDIENTS:
• 10oz Grass-Fed Lamb Medallions
• 1 frozen scallion pancake dough
• 1 egg
• Chopped scallions and cilantro
• 1⁄4 tsp salt
• 1 lettuce wrap
• 1 tbsp Sriracha
• Cooking oil
Lamb medallions marinade:
• 1⁄2 tsp Sichuan mala powder
• 1⁄4 tsp white pepper powder
• 1⁄2 tsp soy sauce
• 1 tb Shaoxing wine
• 1⁄2 five spice powder
• 1⁄2 tsp oyster sauce
