EP 16. Where was this bánh bột lọc lười hack when I was a college student missing Vietnamese food 😫 My rice cooker is a 2 cups uncooked / 4 cups cooked size. Ingredients 100 g tapioca starch 200 mL water 1 oz shrimp, cut into small pieces 1 oz pork belly, cut into small pieces 1 tsp chicken bouillon powder 1 tsp annatto seed oil, optional or sub with paprika 1 tsp fish sauce 1 tsp pepper Scallions, thinly sliced, green and white parts separated 1. Saute white part of green onions with pork belly and seasonings * 2. Once pork belly is no longer pink, add shrimp and saute * 3. Combine tapioca starch and water. Add to rice cooker pot and let cook with lid on for about 10 minutes 4. Flip the switch to warm, add green part of scallion and mix to combine 5. Serve with nước chấm (dipping fish sauce) *NOTE! To “sauté” in this kind of rice cooker you will likely need to put the lid on between stirring. Otherwise there will not be enough weight inside of the pot to keep the trigger pressed ...
