Ep 13. Recipe in Caption! Things have been a bit chaotic lately…Luckily things are leveling out, so I’m back with a classic mushroom mixed rice!
Originally the recipe I shared included soaking the rice. This recipe is basically the same but does not involve the soaked rice step (as a result it uses more water).
As usual the water to rice ratio may differ depending on the kind of rice you use! Cooking times may also differ depending on your rice cooker model.
My rice cooker is a 2 cups uncooked / 4 cups cooked size.
Ingredients
3/4 cups medium grain rice
3/4 cups hot/warm water
2 dried shiitake mushrooms
2 tbsp soy sauce
1 tbsp mirin
1 tbsp cooking sake
1/2 tbsp sesame oil (optional)
5oz mushrooms of choice
1. Create mushroom “dashi” with the dried shiitake mushrooms and hot/warm water. Set aside for 10-15min
2. Squeeze the dried shiitake to drain the excess liquid from them.
