On paper, cabbage rolls sound boring and sad. But a good, tight roll stuffed with meat, rice and aromats is a thing of beauty and elegance… because in my book, often times, “low-brow” food outclasses the fancy stuff. The recipe makes enough cabbage rolls for 4 peeps or 3 hungry peeps. Peep it. 🫡

Ingredients
1 Tbsp sesame oil
1 Tbsp neutral oil (like canola or vegetable)
1 small yellow onion, finely diced
1 Tbsp fresh ginger, grated
4 garlic cloves, minced
1 pound ground pork
1 cup cooked white rice
2 tsp soy sauce
1 tsp fish sauce
2 tsp gochugaru (Korean red pepper flakes), optional
1 egg, beaten
10-12 whole napa kimchi leaves (from 1 large jar of kimchi), excess liquid squeezed out
1 cup kimchi brine
1 cup chicken broth
1 Tbsp gochujang
1 tsp sugar
