🇬🇷🐟Salmon Spanakopita! (Crispy Salmon Puffs) Spanakopita is a top tier starter at any self-respecting Greek-American restaurant. They’re crispy with a gooey, warm interior usually filled with feta cheese and a few other simple ingredients. Today we’re “salmon-ifying” things and taking it to the next level. Would you? 
Serves: 6 (makes about 12 triangles) Ingredients
2 Tbsp olive oil
1 small yellow onion, finely chopped
2 garlic cloves, minced
10 oz fresh spinach, roughly chopped
1 tsp kosher salt
1/2 tsp black pepper
8 oz cooked salmon, flaked
1/2 cup crumbled feta cheese
2 Tbsp chopped fresh dill
1 egg, lightly beaten
12 sheets store-bought phyllo dough, thawed
