Oktoberfest is the largest folk festival on earth and this is a German dish called Schweinshaxe (in the USA we call them Ham Hocks) & Kartoffelklöße (aka Potato Dumplings) that people eat around this time of year at the fest. You can totally make a version of this with pig trotters or shank, but for the real deal you’ll probably need to talk to your local butcher about getting yourself a whole “hind shank” from the ham of the hog.
