Blue Masa Focaccia Test

Ingredients:
* 125g Blue Masa (1 cup)
* 375g Bread Flour (3 cups)
* 450g Water (2 cups) at room temperature
* 5g instant yeast
* 10g Salt (1 ¾ tsp)
* 50g Melted Lard (¼ cup) for pressing into the dough
* Optional Toppings: Flaky sea salt, Oaxaca cheese, Al pastor
Technique:
1. Combine blue masa, bread flour, salt, yeast, and water until a sticky dough forms. Cover and rest for 30 minutes.
2. Perform 4-6 folds, rest 30 minutes, and repeat 2-3 times.
3. Cover and ferment at room temperature for 3-4 hours or refrigerate up to 24 hours.
4. Oil a 9x13 inch pan. Transfer dough to the pan, stretch to fit, and rest if needed. Cover and proof for 1-2 hours.
5. Preheat oven to 450F. Dimple dough with fingers and press melted lard into the dimples. Add toppings.
6. Bake for 20 minutes until golden brown. Cool in the pan, then transfer to a wire rack.
