Simple Salmon & Basil Sauce!
I was inspired by the famous dish “Salmon with Sorrel Sauce” from French chef Pierre Troisgros. Pierre, along with his brother Jean, operated the renowned restaurant Les Frères Troisgros in Roanne, France for a long time.
For those who don’t know about it, sorrel is an amazing herb that is tart, tangy and slightly bitter. It’s often overlooked which is a bummer. Another issue is that sorrel isn’t always easy to find at your average grocery store (though Whole Foods does carry it from time to time.) Which is exactly why I swapped it out for basil because… everybody loves basil. But really, basil works gorgeously in this sauce and brings that herbaceous, kitchen-filling goodness that we all love it for. This recipe might seem old-school because, well, it is… it’s stood the test of time and I hope you dig it! 🤘🏼 Adam
