Easy Lemon Feta Pasta
Ingredients:
* 8 oz pasta (I used rigatoni)
* 2 tbsp butter
* 2 cloves garlic, minced
* Zest of 1 lemon
* ½ cup heavy cream
* ¾ cup crumbled feta, plus more for topping
* 1 cup fresh spinach
* Salt and pepper, to taste
* Reserved pasta water
Instructions:
1. Cook pasta according to package directions. Reserve about ½ cup of the pasta water before draining.
2. In a large skillet over medium heat, melt the butter. Add garlic and lemon zest and sauté until fragrant, about 1 minute.
3. Stir in the heavy cream and bring to a gentle simmer. Add feta and stir until mostly melted and combined.
4. Add the cooked pasta and a splash of reserved pasta water to loosen the sauce as needed.
5. Toss in fresh spinach and stir until just wilted. Season with salt and pepper to taste.
