Crispy Roasted Potatoes with Herby Mint Sauce
Ingredients:
For the Potatoes:
• 2 pounds potatoes, washed and diced into bite-sized pieces
• 2 tablespoons olive oil
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1/2 teaspoon paprika (optional)
For the Herby Mint Sauce:
• 1 cup fresh mint leaves, packed
• 1/2 cup fresh cilantro leaves, packed
• 2 cloves garlic, minced
• Juice of 1 lime
• 1/4 cup water
• 1/4 cup olive oil
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
• 1/4 cup finely chopped red onion
Instructions:
Preheat the oven: Preheat your oven to 425°F (220°C).
