🐟Haddock Veracruz🐟
INGREDIENTS:
• Tomatoes
• Vidalia onion
• 2–3 peppers
• Kalamata olives
• Capers
• Haddock
• Olive oil
STEP 1: Prep veggies and add to bowl.
STEP 2: Add olive oil to stove.
STEP 3: Cook onions until soft, about 3-5 minutes.
STEP 4: Add peppers, capers, and olives. Cook until onions are opaque and peppers are softened, about 3 minutes.
STEP 5: Add tomatoes and cook for 1 minute.
STEP 6: Add haddock, skin-side down and drizzle with olive oil. Season with salt and pepper.
STEP 7: Flip the fish, cover, and cook until done (about 4-5 minutes, or when the fish is flaking).
STEP 8: Serve over Basmati or Jasmine rice and enjoy!
