Lemony Quinoa & Rice Salad with Asparagus, Peas & Basil
Ingredients
1 cup cooked quinoa & rice blend (microwaved or prepared on the stove)
1 ½ cups water (if cooking from scratch)
1 bunch asparagus, chopped into pieces, woody ends removed
2 cups peas
½ cup fresh dill, chopped
½ cup parsley, chopped
½ cup fresh basil, chopped
¼ cup toasted almonds (or pistachios), roughly chopped
½ cup thinly sliced sugar snap peas or shaved fennel
1 lemon, zested and juiced
⅓ cup olive oil
Salt and pepper to taste
¼ teaspoon Aleppo pepper or chili flakes (optional)
¼ cup shaved Parmesan
Instructions
If using uncooked quinoa and rice, rinse well and cook according to package directions. Fluff and set aside.
Boil asparagus and peas for 2-3 minutes until just tender. Drain and immediately blanch in ice water to keep them vibrant.
