Ingredients
2 boneless, skinless chicken breasts
2 tbsp olive oil
1 shallot
3 garlic cloves
2 cups spinach
4 oz herb goat cheese
3 oz sundried tomatoes
Salt and pepper to taste
Your choice of sides (I chose risotto and asparagus!)
Instructions:
1. Preheat the oven to 375°F (190°C). Wash and dry two chicken breasts, then set them aside.
2. In a large skillet, heat the olive oil. Add the minced shallot and sauté until fragrant (about 2 minutes). Add the minced garlic and sauté for an additional 1-2 minutes. Season with salt and pepper to taste. Add two generous cups of spinach to the skillet and stir until wilted. Remove from heat and let it cool slightly.
3. In a bowl, combine the goat cheese, sun-dried tomatoes, and the spinach/shallot mixture. Mix until thoroughly combined.
