my Goat Cheese and Sundried Tomato Salmon couldn’t be more simple or pack a bigger punch 🤍 trust me on this one… MAKE IT!
Ingredients
1 shallot, minced
1 tosp olive oil
2 cups fresh spinach
4 oz herbed goat cheese
1/4 cup sun-dried tomatoes, removed from oil
2 salmon filets
Instructions
1. Preheat oven to 425F.
2. Saute your minced shallot in olive oil until golden brown and fragrant.
3. Add the spinach and stir until the spinach is wilted. Set aside to cool slightly.
4. To a bowl, add the goat cheese and the spinach/shallot mixture. Add the sun-dried tomatoes and mix to stir.
5. Prepare a baking dish with parchment paper or additional olive oil.
6. Place to salmon filets skin side down and using a knife, carefully slice a small slit right down the middle of both fillets.
7. Using a spoon or the back of a fork, fill the cavity with the goat cheese mixture. Once both cavities are filled, coat the salmon fillets in the remaining mixture.
