my favorite healthy sweet treat 🩷
1 cup medjool dates
1 cup almond pulp (or sub almond flour or regular flour)
3/4 cup almond butter
1.5 tsp vanilla extract
3 tbsp melted coconut oil
Dash of cinnamon
Pinch of salt
4 oz dark chocolate bar or chips
Instructions
1. Add dates to a bowl with water and let soak for 30 minutes.
2. Add almond pulp (or flour) to a bowl with the almond butter, 1 tsp of vanilla extract, 2 tbsp coconut oil, cinnamon and salt. Mix until combined.
3. Using the back of a spoon, divide evenly among 6 cups and press into the bottom of cupcake/ muffin liners
4. Remove the dates from the water and add to a food processor or blender. Pulse with .5 tsp of vanilla until smooth and caramel-y.
5. Layer the date mixture into the cups.
6. Heat the chocolate chips with 1 tbsp coconut oil until melted and fill the cups with melted chocolate. Top with flaky salt.
7. Place in freezer or fridge to set.
