Ingredients
2 salmon fillets
2 onions, sliced thin
2 tbsp olive oil
5 oz goat cheese
2 tsp fresh thyme leaves
salt

Instructions
1. Preheat oven to 425F and prepare a baking sheet or dish by brushing with olive oil.
2. Slice two onions very thinly. Heat a pan over medium-low heat and add 2 tablespoons of olive oil. Cook the onions in the pan, stirring occasionally, until they turn golden-brown and caramelized.
